Pickup Nachos

1 lb Hamburger
1 can Refried beans
1 can Green chilies
1 pkg taco seasoning
grated cheese
tortilla chips
sour cream
Salsa
Brown hamburger and drain fat. Make taco seasoning as directed. Put chips on cookie sheet. Spread refried beans on top of chips. Sprinkle meat on top of beans. Sprinkle green chilies. Top with cheese and bake in oven on 350* until cheese is melted. Serve with sour cream and salsa.

French Toast

This could possibly be the best french toast I've ever made. I just went online and looked up recipes and got some ideas from some of the recipes and threw the ideas in a blender and OMG!!!
2/3 C Evaporated milk
4 eggs
3 T flour
1 T Cinnamon
1 T brown sugar
1 T white sugar
1 tsp Vanilla
dash of nutmeg
salt
Blend in blender til mixed together. Dip both sides of 1 inch sliced french bread in mixture. Place on greased heated griddle. Top with butter and syrup. PS. before every griddle batch you do you need to stir mixture before you dip the bread.

Chicken Salad

2 12.5 oz cans of chicken
2 celery stock diced
3 gala apples diced
grapes cut in half
1/4 C if even that of minced onions (Sometimes I just use green onions)
1 tsp garlic salt
1 1/2 tsp pepper
1/2 C mayo
1/2 package onion soup mix
1/2 C apple juice
1 C sour cream or Cream cheese
Cut up all your veggies and fruit place in large bowl with chicken. In a medium bowl combined all the other ingredients then pour mixture over chicken mixture and stir together. Serve on top of a salad or as a sandwich.

Cafe Rio Chicken

5 lbs Boneless Skinless Chicken Breast
1 Bottle Kraft Zesty Light Italian Dressing
1 T Chili Powder
1 T Cumin
3 Cloves Garlic, minced
Throw in crockpot cook on low for 4 hrs or until its able to shred. Shred and cook for another hour.

Manicotti

8 Manicotti Noodles
1/2 lb Grated Mozzarella Cheese
1/2 C Cottage Cheese
2 slightly beaten eggs
2 T Grated Parmesan Cheese
2 T Soft butter
1/2 tsp Salt
1/2 tsp Pepper
1 16 oz bottle of traditional spaghetti sauce

Cook noodles until almost done and drain. Stuff noodle with a mixture of everything but the sauce. Lay noodles flat in a 9x13 pan and cover with sauce. Sprinkle with more parmesan cheese and bake 350* for 45 minutes

Stir Fry

Mushrooms, Sliced
Zucchini, Sliced
Onion, Chopped
minced garlic
Carrots, Sliced very thin
Cashews
Boneles Skinless Chicken Breast
1 14 oz can of pineapple tidibts(save juice for sauce)
Cook all Vegetables in hot oil separately. Stir fry chicken thinly sliced in olive oil until done. Add rest of vegetables to chicken in pan and cover with sauce. Add cashews.

Sauce:
Juice from Pineapple
2 T cornstarch
1 C Chicken broth
1-2 T soy sauce
Pinch of salt
3 T vinegar
3-4 T brown sugar
1/4 C cold water
Put all ingredients in a jar and shake.

Vicki Spare Ribs

1 C Ketchup
2 tsp. Salt
1/2 tsp. Tabasco sauce (optional)
1/4 tsp. Chili Powder
2 C Water
1 tsp. Pepared Mustard
1 C Brown Sugar
Brown 1-2 lbs extra lean stew meat in oil. Put meat in large pan with high sides and a lid. Pour sauce over ribs. Cover with 3-4 Large sliced onions (break apart the rings). Baked covered at 325* for 2 hours. Bake last 1/2 hour uncovered. Serve over rice.
