Pickup Nachos

1 lb Hamburger
1 can Refried beans
1 can Green chilies
1 pkg taco seasoning
grated cheese
tortilla chips
sour cream
Salsa
Brown hamburger and drain fat. Make taco seasoning as directed. Put chips on cookie sheet. Spread refried beans on top of chips. Sprinkle meat on top of beans. Sprinkle green chilies. Top with cheese and bake in oven on 350* until cheese is melted. Serve with sour cream and salsa.

Mexican Beef

1 Can beef chunks (drained)
1 diced tomatoes with green chilies (drained)
1 can black beans (drained and rinsed)
½ tsp salt
½ tsp garlic powder
¼ tsp cumin (optional)

Heat in sauce pan or in crock pot. Serve with rice or in tortillas.

Enchilada Bake

(Grandma Pauline)
1 lb. Hamburger
1 small onion
1 (15 oz) can tomato sauce
1 (14.5oz) can diced tomatoes
1 can green chilies
1 pkg. corn tortillas
1 pkg. enchilada or taco seasoning
½ lb. grated cheese

Layer in pan and bake at 350* for 25 minutes

Easy Chicken & Cheese Enchiladas

1 (10.75 oz) can cream of chicken soup
½ C sour cream
1 C picante sauce
2 tsp chili powder
2 C chopped cooked chicken
½ C black beans (optional)
½ C shredded cheese
6 flour tortillas
Stir soup, sour cream, picante sauce, and chili powder in bowl. In a separate bowl 1 C soup mixture, chicken, black beans and cheese. Divided chicken mixture among the tortillas. Roll up the tortillas and place them in a casserole dish. Pour the remaining soup mixture over the tortillas. Cover and bake at 350* for 40 minutes or until bubbling
